Chicken Balls and Avocado Pesto Sauce

I seriously told myself I would just enjoy a night off, no blogging. Nope. One of my favourite things about doing this often is that all the grocery store staff know me, and comment when I come in. The one always laughs that I don’t use a basket, I just stack things up on my arms.  I feel like they know the real me.

Speaking of which, a random woman walked by me today and started shaking her head and smirking.  I said, “whatchu laughin’ at?!” and she replied, “Do you even eat?”

*cue my smile dropping off my face*

Laughing at how thin I am.  And I’m not gonna be like “UHM ACTUALLY I HAVE A FOOD BLOG, READ ABOUT IT.”

But really, I dedicate as much time to wellness as I do to my day job; whether it be meditation, yoga, clean eating, getting outside, remedying maladies with food, helping people lose weight to feel confident, and mostly just sharing my knowledge and experience on how to actually do all these things.  I am the healthiest (Mind, Body and Spirit) that I’ve been in my whole life.  Even the people who know that this is what I do, tell me to get some meat on my bones. If any of you have said this to me and you are reading this: Go Fuck Yourself.

noods

Ingredients

Noods

2 large carrots, spiralized

1 purple yam, spiralized

1 tbsp olive oil

1/2 tsp garlic powder

1/2 tsp sea salt


Sauce

1 avocado

2 garlic cloves

1/2 cup fresh basil

2 tbsp olive oil

1/4 cup pine nuts


Meatballs

1 lb ground chicken

1 large egg

2 garlic cloves, minced

1 tsp  dried oregano

1 tsp dried basil

1/2 tsp zesty herbamare or sea salt

2 tbsp tigernut flour, or almond or cassava flour

 

Instructions

Noods

Combine spiralized carrots and yam in a steamer and steam for 5 minutes.  Remove from heat, strain and stir in olive oil, garlic and seat salt.

Sauce

Combine all ingredients in food processor and mix until smooth.

Meatballs

Preheat oven to 350F. Combine all ingredients in a medium mixing bowl and make 8 meatballs.  Bake for 30 minutes


When all components are complete, lay the carrots on the plate first, spoon the avocado pesto on top and place the meatballs on top again.  Bone app the teeth.
