Jack O’Lantern Stuffed Peppers

A great idea for children, or adults who act like children! (me)

I’m not taking credit for the idea but this is my recipe anyway.  I originally saw it on one of those stupid “Tasty” videos on Facebook where people share things they’ll never actually make which is probably for the better because they’ll put you into cardiac arrest and somehow every single thing is battered or baked with cheese or deep fried in pure Oreo filling and topped with candied bacon?

Anyyyywaaaay.

I like to bake the pepper empty before stuffing it so that I can drain the water out of it.  Nobody wants soggy leftovers.  But don’t take it from me, I’m not a chef, just a dumb blogger that spends 17 hours a week in the kitchen.  Probably 2 of those hours are spent staring at a timer thinking about the meaning of life.  I’m gonna start another page about a 25-year-long existential crisis.  STAY TUNED.  Also, Happy Hallowe’en.

Ingredients

4 orange bell peppers

1 lb ground beef

1 small yellow onion, minced

2 cloves of garlic, minced

1 28oz can diced tomatoes

1 tbsp oregano

1 tsp salt

1 tsp pepper

1 tsp chili flakes

1 tbsp olive oil

Instructions

Preheat oven to 350F.  Cut off the pepper’s hat and cut out all the seeds.  Carve whatever face you choose.  Rub a few drops of olive oil around the inside of each pepper and sprinkle with salt.  Place on baking sheet and bake for 25 minutes or until they start to get wrinkly.  Remove from the oven and drain.

In a large frying pan, fry ground beef with onions and garlic and drain once fully cooked.  Season with salt, pepper, chilli flakes and oregano. Add can of tomatoes and simmer until the liquid reduces.  Spoon the mixture into the pepper and put his hat back on.

Easy peasy, lemon squeezy!
