Whole30 Round 2 (Completed)

In April of 2013, I had a little bit of a vegetarian stint after getting food poisoning from some nasty pork ribs.  Unfortunately for me, I knew so little about nutrition that I was shooting in the dark and grabbing whatever I could throughout the day that didn’t have meat in it.  I would eat French fries, lots of coffee, rice, bean salads, granola bars, vegetable soup from Tim Hortons and bags of chips.  After about 30 days my hands started turning red, and every day this warm rash got bigger and bigger, identically on both sides.  I was at the hospital 3 days in a row pleading that something was wrong and the doctor kept telling me it was a sunburn and gave me a steroid cream.  After a week, the rash went from my fingertips all the way up to my shoulders and I couldn’t leave the house without crying because the sun made it worse.  I started listening to what my body was telling me and bought a family sized salmon filet and ate the whole thing.  When I woke up the next day the rash was gone.
You would think that I had learned from that experience that what I put into my body is very important but nope.  I modified my exact same diet and added Vietnamese pho soup into the mix to get my b12.  Six months later, I had no immune system and was admitted to the hospital for 2 weeks.  I had basically every common infection your body should easily be able to ward off.  Ear infection, common cold, throat infection, bladder infection, and a few more.  I did so many blood tests as the hospital kept feeding me rice, corn, pudding and a cocktail of 5 kinds of antibiotics.
This is when holistic nutrition became a huge part of my life.  The whole30 experience is what changed everything. After learning a little bit about nutrition, (ie: finding out what a carb was) I was amazed that I was able to get out of bed in the morning given my current diet.  I sped home and threw away everything in my pantry and started whole30 and within that 30 days I had never felt so good in my life.  I was a horrible cook so it was very time consuming and emotional… And also frustrating not knowing what’s good and bad.  I’ve been doing this for 3 years now mostly following the 80/20 rule.
Day One – Sept 10
Salmon and Lox with fruit at Cora’s in Ottawa – Aka The Last Meal
Snacking at the airport in Winnipeg – Cobb salad w no bacon & no cheese and water bottle… Cost: $8,000
2 sunny side up eggs with cayenne flakes and snacking on chicken and cucumbers while making bone broth 🤓
Day Two – Sept 11
2 cups of bone broth with chilli powder
2 sunny side up eggs
Chicken Salad with cucumbers and green apple
Roasted pumpkin seeds in coconut oil
1/4 cantaloupe and herbal tea
Day Three – Sept 12
2 cups bone broth
2 hard boiled eggs
3 pieces of turkey bacon
Chicken Salad with cucumbers and green apple
Roasted pumpkin seeds in coconut oil
Oranges, cantaloupe and grapefruit
Roasted carrots, asparagus, brussels sprouts and an avocado

Day Four – Sept 13th
2 cups bone broth
2 hard boiled eggs
Chicken Salad with cucumbers and green apple
Roasted pumpkin seeds in coconut oil
Oranges, cantaloupe and grapefruit
Spinach salad with tomatoes, olives, 1 egg, chicken, pumpkin seeds, pomegranate vinaigrette
Serving of tomato and ground turkey sauce

Day Five – Sept 14th
2 cups of bone broth
2 breakfast bell peppers stuffed with eggs and ground turkey sauce
Oranges, cantaloupe and grapefruit
Asparagus, roasted pumpkin seeds
Sweet potato fries with homemade mayo

Day Six – Sept 15th
2 cups of bone broth
2 breakfast bell peppers stuffed with eggs and ground turkey sauce
4 large roasted carrots, 1 boiled egg
Sweet potato fries with homemade mayo
Apple, grapes, strawberries, banana

Day Seven – Sept 16th
2 cups of bone broth
Spinach salad with tomatoes, olives, 1 egg, chicken, pumpkin seeds, pomegranate vinaigrette
3 pieces of chicken bacon, 4 roasted carrots, 1 tomato with balsamic vinegar
1 roasted bell pepper, peppermint tea

Day Eight – Sept 17th
4 pieces of chicken bacon, 2 fried eggs
2 cups of bone broth
Kale Green smoothie
Dijon chicken, steamed broccoli with lemon juice and mashed sweet potatoes

Day Nine – Sept 18th
“Clean Green” smoothie from Jugo Juice
Greek Salad, no feta
Half an avocado, 2 fried eggs, 2 pieces of turkey bacon
Handful of Strawberries
Mineral water and lemon

Day Ten – Sept 19th
2 cups of bone broth
2 hard boiled eggs, 3 pieces of turkey bacon
Chili
Cucumber, celery, green apple and chicken salad
Fried steak and mixed vegetables

Day Eleven – Sept 20th
2 cups of bone broth
2 hard boiled eggs, 3 pieces of turkey bacon
Chili
Cucumber, celery, green apple and chicken salad
Plain Strawberry Banana Puree

Day Twelve – Sept 21st
2 cups of bone broth
3 scrambled eggs, 2 pieces of turkey bacon
Chili
Cucumber, celery, green apple and chicken salad

Day Thirteen – Sept 22nd
(Working out of town) Kale Smoothie

2 fried eggs and chicken

Day Fourteen – Sept 23rd
Spinach Smoothie

Spinach salad with tomatoes, olives, 1 egg, pickled asparagus, pumpkin seeds, pomegranate vinaigrette
2 fried eggs, chicken
2 cups of bone broth

Day Fifteen – Sept 24th
2 eggs on a bed of shredded sweet potato
2 pieces of turkey bacon
5 apples – I blacked out and actually ate 5 apples
2 tbsp pumpkin seed butter
Bbq steak and roasted asparagus
Tuna tataki at Cactus Club with no vinaigrette
Strawberries and dried apples
2 cups of bone broth

Day Sixteen – Sept 25th
2 cups of bone broth
2 eggs, 2 pieces of turkey bacon
2 hasselback sweet potatoes with apple and walnuts
Spinach and arugula salad

Day Seventeen – Sept 26th
2 cups of bone broth
3 scrambled eggs
Lemon and Herb fried salmon
Spinach and arugula salad
2 hasselback sweet potatoes with apple and walnut
1/2 avocado
Stir Fry at Mongolian style restaurant

Day Eighteen – Sept 27th
2 cups of bone broth
3 scrambled eggs
Lemon and Herb fried salmon
Spinach and arugula salad
2 hasselback sweet potatoes with apple and walnut
1 banana
1/2 avocado
1 tbsp pumpkin seed butter

Day Nineteen – Sept 28th

Garden Salad with very plain and tasteless chicken breast

Day Twenty – Sept 29th
(Still out of town) 1 apple
2 tomato slices and 3 plain scrambled eggs from A&W
Tom Yum soup with coconut milk base at Bamboo Hut in Sylvan Lake
4 chicken legs (super balanced meal)

Day Twenty-One – Sept 30th
2 cups of bone broth
3 scrambled eggs
1 guava, 1 avocado
Watermelon, Strawberries
Lettuce burger with mixed greens

Day Twenty-Two – Oct 1st
2 fried eggs, watermelon, strawberries, blackberries, apple
Steak and mixed vegetables

Day Twenty-Three – Oct 2nd
2 scrambled eggs, watermelon, blackberries

I have to say… this was difficult but worth it.  I’m in complete control of my cravings.  I don’t want to eat burgers, I want to eat more spinach salad and jerusalem artichokes!
I’ll write a separate post about the acne aspect.  I was hoping Whole30 would help my acne but it actually didn’t.  That doesn’t mean I haven’t learned anything – it just means that my acne stems from stress and hormones so I’m now putting some more effort into stress management.  I’ve started supplementing magnesium and started yoga and stopped taking my acne medication and replaced it with holistic alternatives.  I’ve finally found a routine that seems to target acne without making my skin peel.
Also, maybe all things considered, I seem to have beat my road rage!  I travel for work so I spend hours in my car every day and was feeling a lot of stress from that and I haven’t felt angry in a few weeks.  I don’t know how that relates to Whole30 but it all ties together for me always trying to be a better version of myself.
