2 raw egg yolks
1/2 lemon, squeezed
1 tsp garlic powder
1/2 tsp salt
1/4 tsp ground pepper
1 tbsp dijon mustard
1 cup regular olive oil (not extra virgin)
In a small mixing bowl, whisk yolks, lemon, garlic powder, salt, pepper and mustard.
Very very slowly add olive oil to mixture while whisking, only one tablespoon at a time. As you whisk, you will see it slowly become white and fluffy. At this point, you can add the rest of the olive oil.
If you do not add the oil slowly, it will not turn into mayonnaise. Cool? Cool.
Making your own mayo is kind of an essential thing if you’re going to follow the paleo lifestyle. Most of the stuff you’re getting from the store has 15+ ingredients for some reason. Do this until you know it by heart!
