1 head of iceberg lettuce
3 garlic dill pickles
1 lb ground beef
1/2 yellow cooking onion, minced
4 garlic cloves, minced
1 jalapeno pepper, finely chopped
1 large egg
1/2 tsp salt
1/2 tsp chili flakes
1/2 lime, squeezed
2 tbsp water
2 tbsp coconut oil
In large mixing bowl, combine ground beef, onion, garlic, jalapeno, one egg, chili flakes, salt. Form patties. (This made 3 patties for me.) In large frying pan, melt coconut oil on a low heat setting and place patties. Let simmer for 10 minutes and then flip. Let simmer for 10 more minutes.
Slice tomato and pickles. Gently tear whole lettuce leaves from head of lettuce to use instead of buns.
Add half of the avocado, loosely chopped, and lime juice and 2 tbsp of water to a blender. Blend for 10 seconds.
I hate eating when it’s hot outside. If I could eat a banana and water and survive the day, I would. This was really fresh and bearable. Inspired by myself laying in bed, compromising with my own body on what I would actually eat.
